Mediterranean Grilled Chicken

1 shallot chopped

4 half chicken breasts

3 tsp. Mediterranean Grilling Spice

2 Tb. butter

1 lemon

 1 chopped fresh parsley leaves

Preheat oven to 350 degrees F.

Liberally coat chicken breasts with Mediterranean Grilling Spice.  Set aside.  In a heavy (oven proof skillet), sauté the shallot until soft.  Add chicken breasts to skillet and cook over medium heat until browned -  approximately 5 minutes.  Turn each chicken breast over and place skillet into oven for 20 minutes.   Remove from oven and place chicken breasts in serving dish.  Add butter and juice of 1 lemon to skillet.  When sauce begins to thicken and sizzle, pour over chicken breasts.  Sprinkle with fresh parsley leaves.
