Blackened Snapper

1 ½  lb. red snapper filets

1 ½  Tb. Nawlins Shrimp Seasoning (more if you like it hot and spicy)

¼ tsp. Smoked Spanish Paprika

½ c. flour (Wondra is preferred brand)

2 Tb. olive oil

2 Tb. butter

Preheat oven to 400 degrees F.  Divide snapper filets into four pieces. Mix Nawlins Shrimp Seasoning and Smoked Spanish Paprika with flour and coat each side of the fish.  Heat heavy (oven proof) skillet over high heat until hot.  Add oil, swirl to coat then add butter.  When butter begins to sizzle, add snapper pieces and cook for approximately one minute.  Turn pieces over and  place skillet in oven to bake for approximately 8 minutes.
