Grilled Halibut with Key Lime Pepper and Mango Salsa
4 fresh halibut steaks about 1” thick
Extra-virgin olive oil
2 Tb. Key Largo Lime Pepper
1 tsp. salt
Rinse the halibut steaks under cold water and pat them dry. Combine the Key Largo Lime Pepper and salt. Brush extra-virgin olive oil on both sides of steaks and sprinkle the spice mixture evenly over all. Place steaks on a lightly oiled medium high grill and cook for 5 minutes on each side. Serve with Key Lime Pepper and Mango Salsa.
Key Largo Lime Pepper and Mango Salsa:
2 fresh, ripe mangoes peeled and chopped into small cubes
½ minced red onion
2 Tb. chopped canned jalapeno chiles
2 Tb. fresh lime juice (juice of two small limes)
½ tsp. Key Largo Lime Pepper
½ tsp. sugar
½ c. minced fresh cilantro
Combine all ingredients and allow to set (to marry) at least 30 minutes.
