Scalloped Sweet Heat Sweets

3 medium sweet potatoes, peeled and thinly sliced (1/8” thick)

2 c. heavy cream

1 ½ Tb. Jamaican Sweet Heat

2 Tb. butter

Preheat oven to 375 degrees F.  Wisk together the cream and the Jamaican Sweet Heat.  In a 9 x 9 inch casserole dish, arrange a layer of potatoes.  Drizzle with 3 Tb. of the cream mixture. Repeat with remaining potatoes and cream forming 10 layers.  Dot with butter.  Cover and bake for 30 minutes.  Remove cover and continue baking for 45 minutes to an hour or until the cream has been absorbed, the potatoes are tender, and the top is brown.
